Warm chicken and avocado salad

Ingredients
  

Chicken

  • 500 gram Chicken breast, sliced into strips
  • 2 tbsp Moroccan spice blend
  • 2 tbsp olive oil extra virgin

Salad

  • Avocado slice
  • 4 cup mixed salad leaves
  • 300 gram tomatoes diced
  • 2 red capsicums sliced

Dressing

  • 2 tbsp Tahini
  • 1 tbsp honey
  • 1 lemon

Instructions
 

  • Sprinkle the Moroccan spices over the sliced chicken and rub in.
    500 gram Chicken breast, sliced into strips, 2 tbsp Moroccan spice blend
  • Heat oil in a frying pan over medium heat. Once hot, add in the chicken slices and cook 4-5 minutes on each side, until golden brown and cooked through.
    2 tbsp olive oil, 500 gram Chicken breast, sliced into strips
  • Prepare the salad ingredients throughout 4 bowls.
    1½ Avocado slice, 4 cup mixed salad leaves, 300 gram tomatoes diced, 2 red capsicums sliced
  • Whisk together the salad dressing ingredients.
    2 tbsp Tahini, 1 tbsp honey, 1 lemon
  • Place chicken on top of salad with a drizzle of salad dressing

Alternative Swaps

Vegetarian/Vegan Moroccan Spice Swaps
Swap chicken breast for frim tofu or tempeh, slice into strips or swap for chickpeas If you don't have access to Moroccan spice, make your own combining spices like cumin, coriander, paprika, turmeric, cinnamon and ginger Swap olive oil for other cooking oils such as avocado oil or coconut oil
If avocados are expensive or unavailable you can substitute them for diced cucumber or cherry tomatoes
