Peanut butter chocolate dates

A simple healthy snack that takes under 25 minutes to make. Full of fibre and natural sugar, these date bites are the perfect snack for an afternoon pick me up.

Ingredients
  

  • 9 medjool dates
  • 2 tbsp natural peanut butter
  • 90 grams dark melting chocolate

Instructions
 

  • Un-pit dates and cut in half
    9 medjool dates
  • With a knife spread roughly ½-¾ of a teaspoon of peanut butter
    2 tbsp natural peanut butter
  • Melt the dark chocolate chips either in the microwave for a minute (take out of the microwave every 15-20 seconds and stir) or melt the chocolate over a pot of simmering water.
    90 grams dark melting chocolate
  • Dip the dates into chocolate and transfer onto some aluminium foil
  • Place the dates into the fridge for 20 minutes or until the chocolate is set

Notes

Alternative Swaps

Flavour swaps Vegan  
Swap for Medjool dates for dried figs or prunes to change up the flavour
Swap peanut butter for an alternative nut butter such as almond butter
Swap dark melting chocolate for a vegan chocolate  

Tips

Sprinkle dates with coconut flakes or crushed nuts once they have been dipped in chocolate
