Chilli beans with avocado

It’s cold and rainy outside, and all you want is warm comfort food like this vegetarian chilli recipe. It’s a crowd-pleaser, and leftovers are even tastier the next day! Plus, if you select your toppings wisely, it can be vegan and gluten free, meaning this meal will please everyone.

  • 2 tsp olive oil extra virgin
  • 1 onion
  • 2 red capsicums, chopped
  • 3 garlic cloves
  • 1 zucchini, diced
  • 2 tsp chilli powder
  • 2 tsp cumin
  • 2 can chopped tomatoes
  • 1 can red kidney beans
  • 2 avocados
  • 1 tbsp lime juice


  • Coriander, chopped
  • Corn chips to serve


  • Heat oil in a medium pan, add onion, garlic, capsicum and zucchini. Fry for 10 minutes, stirring occasionally. Stir in spices once the vegetables are cooked (softened).
    2 tsp olive oil, 1 onion, 2 red capsicums, chopped, 3 garlic cloves, 1 zucchini, diced, 2 tsp chilli powder, 2 tsp cumin
  • Add tomatoes and beans (adding 1 can of beans liquid). Simmer covered for 15 minutes.

  • Meanwhile, peel and smash avocado in a bowl. Add in coriander (if using) and lime juice, then mix well to result in a guacamole mixture.
    2 avocados, 1 tbsp lime juice, Coriander, chopped
  • Place the soup in bowls, top with guacamole and serve. Add corn chips if using.

Use pre-chopped onion, garlic, and zucchini Ensure spices and canned items are labelled gluten-free If you don't have red capsicums, you can use green or yellow capsicums


If you like extra heat, you can add some diced jalapenos or green chilli
