Heat oil in a medium pan, add onion, garlic, capsicum and zucchini. Fry for 10 minutes, stirring occasionally. Stir in spices once the vegetables are cooked (softened).

Add tomatoes and beans (adding 1 can of beans liquid). Simmer covered for 15 minutes.

Meanwhile, peel and smash avocado in a bowl. Add in coriander (if using) and lime juice, then mix well to result in a guacamole mixture.

Place the soup in bowls, top with guacamole and serve. Add corn chips if using.
