Beetroot muffins

Beetroots are sweet, high in fibre and excellent antioxidants. Kids won’t eat them? Just hide their goodness in some yummy muffins!

Ingredients
  

  • 2-3 raw beetroots peeled
  • 3/4 cup maple syrup
  • 3/4 cup vegetable oil (canola, sunflower) as its neutral in taste .
  • 2 large Eggs
  • 1 1/4 cup all-purpose flour e.g. wholemeal flour.
  • 1 1/2 tsp baking powder.
  • 1 pinch of salt
  • 1 tsp cinnamon

Instructions
 

  • Preheat the oven to 180°C.
  • Use the beetroots raw or roast them at 200 °C until baked through. Finely grate the beetroots and squeeze them lightly to remove excess juice.
  • Mix the wet ingredients, maple syrup, vegetable oil and 2 eggs.
  • Mix the dry ingredients, flour, baking powder, and salt. Then add them to the wet ingredients.
  • Add the grated beetroots and combine well.
  • Pour the mix into the muffins tray for 25-30 minutes or until your toothpick comes out clean when you insert it in the middle.
