Ingredients

raw beetroots peeled

maple syrup

vegetable oil
(canola, sunflower) as its neutral in taste .

large Eggs
1 1/4
cup
all-purpose flour
e.g. wholemeal flour.
1 1/2
tsp
baking powder.

pinch
of salt

tsp
cinnamon
Instructions
Preheat the oven to 180°C.
Use the beetroots raw or roast them at 200 °C until baked through. Finely grate the beetroots and squeeze them lightly to remove excess juice.
Mix the wet ingredients, maple syrup, vegetable oil and 2 eggs.
Mix the dry ingredients, flour, baking powder, and salt. Then add them to the wet ingredients.
Add the grated beetroots and combine well.
Pour the mix into the muffins tray for 25-30 minutes or until your toothpick comes out clean when you insert it in the middle.
