Mixed berry muffins

These muffins are delicious and moist, packed full of sweetness from the berries and finished with a comforting cinnamon touch. They make for a perfect healthy alternative snack when you’re craving something naughty and sweet!
Thinking of skipping breakfast? Wholemeal flour along with bran means these muffins are loaded with fibre, making them suitable as an on-the-go breakfast when you have to get up and go in the mornings.
We’ve even given you a few options to change this recipe up – whether you want the comfort of an apple and cinnamon muffin in winter or a sweet berry muffin in the summer.

Ingredients
  

  • 35 g All-bran cereal
  • 125 ml milk, low-fat
  • 60 g wholemeal self-raising flour
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 75 grams oat bran or oatmeal
  • 150 grams blueberries
  • 150 grams raspberries
  • 1 egg
  • 2 tbsp honey
  • 1/2 tsp vanilla essence

Instructions
 

  • Preheat the oven to 180°C. Line a 12-hole standard muffin tin with paper cases.
  • Put the 35 g All-bran cereal in a bowl, pour over the 125 ml milk, low-fat and soak for 10 minutes.
  • Sift the 60 g wholemeal self-raising flour, 2 tsp baking powder and 1/2 tsp cinnamon into a large bowl. Stir in the oat bran, then fold in the 150 grams blueberries and 150 grams raspberries.
  • Combine the lightly beaten 1 egg, 2 tbsp honey and 1/2 tsp vanilla essence in a small bowl.
  • Add the egg mixture and bran cereal mixture to the dry ingredients and stir gently with a wooden spoon until just combined; do not over-mix.
  • Spoon the mixture into the prepared muffin holes and bake for about 15 minutes, or until lightly browned and a skewer inserted into the centre of a muffin comes out clean.
  • Cool for 5 minutes in the tin before transferring to a wire rack.
  • Makes 10 muffins.

Flavour combos

Banana Muffins Apple and Sultana Muffins (pictured) Raspberry Muffins
Omit: Berries
Add in: 2 mashed ripe bananas
Omit: Berries
Add in: grated apple and sultanas
Omit: Blueberries
Add in: An extra 150g of fresh or frozen raspberries

Tips

  • Use fresh or frozen berries
  • Use other seasonal fruits to mix up your muffins! The base ingredients and portions can stay the same while you swap out the berries for other fruits such as grated apple
