No Bake Date and Oat Energy Balls

Ingredients
  

  • 1 cup medjool dates
  • cup rolled oats can use normal oats, but lightly blend them till they are finer
  • ½ cup seed/nut mix, slightly crushed can use chia seeds, flaxseeds, walnuts or almonds
  • ¼ cup natural peanut butter
  • cup honey

Instructions
 

  • Let dates rest in a cup or bowl of hot water for 3-4 minutes to soften. Drain and slightly dice.
    1 cup medjool dates
  • Place all ingredients in a large mixing bowl.
    1½ cup rolled oats, ½ cup seed/nut mix, slightly crushed, ¼ cup natural peanut butter, ⅓ cup honey, 1 cup medjool dates
  • Portion into balls of desired size, approximately 1 tablespoon.
  • Store in the fridge for up to 5 days, or freeze up to 2 weeks.
