Ingredients:
- 1½ cups Arborio rice
- 2 chicken breasts
- 2 rashers of bacon can be excluded or replaced with 1 cup mushrooms
- 3 ½ cups chicken stock
- 1½ cups of spinach
- 2 tbs vegetable oil
- 1 garlic
- ¼ onion
- ½ parmesan cheese
Method:
Prepare chicken stock. Pour 3 ½ cups of stock into a pot and bring to a simmer.
Dice chicken into 1cm cubes.
Add rice to simmering chicken stock.
Cook chicken, bacon, onion and garlic in a pan with 2 teaspoons of oil on med/high heat.
Once the rice has absorbed the stock and is soft, add chicken, bacon and spinach.
Cook for a further 5 mins, stirring until combined.
Serve with parmesan cheese on top.
