Smashed Broccoli

Ingredients
- 1 large head broccoli cut into florets
- 50-100 g cheese (cheddar, mozzarella, or vegan cheese for dairy-free option)
- 1 tbsp olive oil
- salt to taste
- black pepper to taste
Instructions
- Preheat your oven to 180°C (fan-forced 160°C). Line a baking tray with baking paper.
- Arrange broccoli florets on the tray. Use the base of a cup or glass to gently press down (“smash”) each floret.
- Drizzle the olive oil evenly over the broccoli.
- Sprinkle cheese over the top, and season with salt and pepper.
- Bake for 10 minutes or until the cheese is melted and golden, and the edges of the broccoli are crispy.
- Serve immediately as a snack or side.
Notes
Notes & Swaps:
- For a vegan version, use plant-based cheese.
- Add garlic powder or chili flakes for extra flavor.
- Perfect as a quick snack, a side for pasta, or part of a lunchbox.
