Ingredients
  

  • 1 medium boiled potato
  • salt to taste
  • black pepper
  • other seasonings (e.g., paprika, garlic powder) optional
  • 1-2 slices sandwich cheese (plant-based cheese for vegan option)

Instructions
 

  • Peel and mash the boiled potato.
  • Place half of the mashed potato in a microwave-safe container and season with salt, black pepper, and any additional seasonings.
  • Add the remaining mashed potato on top to form a second layer.
  • Place the cheese slice(s) over the top.
  • Microwave for 30–40 seconds, or until the cheese melts.
  • Serve immediately and enjoy!

  • Swap in plant-based cheese to make this vegan-friendly.
  • Add finely chopped herbs like parsley or chives for extra flavour.
  • Optional: sprinkle a little paprika or chili flakes for a spicy kick.
