Ingredients
- 450 g pepitas (pumpkin seeds)
- 70 g rice malt syrup or brown rice syrup (can swap for maple syrup for vegan option)
- 50 g sesame seeds
- 20 g raw sugar (or coconut sugar for lower GI)
- pinch of salt
Instructions
- Preheat oven to 160°C (fan-forced).
- Line a 20x20 cm square tin or 20x25 cm slice tray with baking paper.
- Add all ingredients to a small saucepan over low heat, gently stirring until the seeds are fully coated and the mixture is sticky.
- Transfer mixture to the prepared tin and use the bottom of a glass to press firmly and evenly.
- Bake at 160°C for 20 minutes.
- Remove from oven, place on a cooling tray, and carefully lift out the baking paper.
- Once cooled, cut into bite-sized pieces using a sharp knife. Keep any crumbs for sprinkling over yoghurt or salads.
- Store in an airtight container for up to 2 weeks.
Notes
Dietary Notes:
- Gluten-free and vegetarian by default.
- Vegan if using maple syrup instead of rice malt syrup.
- Can add extras like dried cranberries, cacao nibs, or chia seeds for flavour and texture.
