Pepita Bites

Ingredients
  

  • 450 g pepitas (pumpkin seeds)
  • 70 g rice malt syrup or brown rice syrup (can swap for maple syrup for vegan option)
  • 50 g sesame seeds
  • 20 g raw sugar (or coconut sugar for lower GI)
  • pinch of salt

Instructions
 

  • Preheat oven to 160°C (fan-forced).
  • Line a 20x20 cm square tin or 20x25 cm slice tray with baking paper.
  • Add all ingredients to a small saucepan over low heat, gently stirring until the seeds are fully coated and the mixture is sticky.
  • Transfer mixture to the prepared tin and use the bottom of a glass to press firmly and evenly.
  • Bake at 160°C for 20 minutes.
  • Remove from oven, place on a cooling tray, and carefully lift out the baking paper.
  • Once cooled, cut into bite-sized pieces using a sharp knife. Keep any crumbs for sprinkling over yoghurt or salads.
  • Store in an airtight container for up to 2 weeks.

Notes

Dietary Notes:
  • Gluten-free and vegetarian by default.
  • Vegan if using maple syrup instead of rice malt syrup.
  • Can add extras like dried cranberries, cacao nibs, or chia seeds for flavour and texture.
