Ingredients
- 1 ½ cups warm water lukewarm, not hot
- 1 tsp white sugar
- 2 tsp dried yeast
- 4 cups plain or pizza flour
- 1 tsp salt
- ¼ cup olive oil
Instructions
- Activate the yeast: In a bowl, whisk together warm water, sugar, and yeast. Set aside for 5 minutes until slightly foamy.
- Prepare the dry ingredients: Sift flour and salt into a large mixing bowl. Make a well in the centre.
- Form the dough: Pour the yeast mixture and olive oil into the well. Use a spatula to mix until a rough dough forms.
- Knead: Transfer dough to a lightly floured surface and knead for 10 minutes until smooth and elastic.
- First rise: Lightly oil a clean bowl. Place the dough inside, cut a small criss-cross on top, cover with cling film or a damp tea towel, and leave somewhere warm for 1 hour or until doubled in size.
- Divide: Turn dough out onto a board and divide into 6 equal portions. Use immediately or freeze for later.
- Bake: Preheat oven to 180°C. Roll out dough, add toppings, and bake for 12 minutes or until golden and cooked through.

Notes & Tips
- Gluten-free option: Use a gluten-free pizza flour blend and add 1 tsp xanthan gum if not already included. Texture will be slightly different.
- Wholemeal option: Swap half the plain flour for wholemeal flour for added fibre (you may need a little extra water).
- Extra flavour: Add 1 tsp dried oregano or garlic powder to the flour.
- Freezing: Wrap dough portions tightly and freeze for up to 3 months. Thaw overnight in the fridge before use.
- Crispier base: Bake pizzas on a preheated tray or pizza stone.
