Ingredients
- 1 cup Cauliflower flowerets
- 1 cup Carrots peeled and cut in cubes
- 1 cup Onion medium, finely sliced
- 1 cup Capsicum medium, cut in cubes
- 1.5 cup Tomato finely chopped
- 0.5 cuup Baby corn
- 2 tsp Dried Fenugreek Leaves
- 4 Green Chilies chopped finely
- 0.5 cup Ketchup
- 3-4 tbsp Oil
- 1 pinch Sugar
- 1 inch piece Ginger julienned
- 1 handful Coriander chopped for garnishing
- 1 cup Paneer or cottage cheese cut in cubes
- 1 tsp Salt
- 1 tsp Red Chili Powder
- 1 tsp Coriander Powder
- 0.5 tsp Turmeric Powder
- 0.5 tsp Garam Masala
Instructions
- Heat 1 tbsp oil in a pan and shallow fry paneer cubes on medium flame till golden brown, remove it from the pan on a paper towel using a slotted spoon and keep aside.
- Now in the same pan, add 1 tbsp oil, carrot, capsicum, cauliflower, baby corn, salt and stir fry it for 4-5 minutes on high flame and stirring continuously, then turn the flame on low flame, cover it and cook for 2 minutes (do not overcook it, veggies should be semi crunchy). Now remove it on a plate or bowl and keep aside.
- Heat remaining oil in the same pan, add sliced onion and stir fry it till golden brown, then add finely chopped tomatoes, salt and cook it while stirring till tomatoes become soft and mushy.
- Add red chili powder, turmeric, garam masala, coriander powder, crushed dried fenugreek leaves, ginger, sugar and stir it till oil is separated. Add 1-2 tbsp water and mix it well.
- Now add all cooked veggies and shallow fried paneer cubes, toss it on medium flame and mix it well.
- Garnish with chopped coriander leaves.
