Frugal Lentil Sausage Rolls

This is my 'what's left in the cupboard/fridge/freezer' meal that still is relatively healthy and low-effort. If you're low on cash, or holding out to payday, you can make a double batch of these for about $6 with homebrand products, minus the eggs.You can also change up the veggies and lentil-type you use. I've had success with capsicum, celery, and even peas and corn. I hope this helps even one student with an equally bare pantry and bank-balance get through the week!
Frugal Lentil Sausage Rolls

Ingredients
- 1 cup red lentils
- 1 onion finely chopped
- 2 tsp minced garlic
- 1 carrot grated
- Salt and pepper to taste can use any other seasonings, I like to add parsley
- 2 sheets of puff pastry
- 1 egg lightly beaten (or a non-dairy milk for a vegan version)
Instructions
- Preheat your oven to 200°C. Line a baking tray with parchment paper.
- Rinse the red lentils and cook them in a saucepan with 2 cups of water.
- Bring to a boil, then reduce the heat and simmer for about 15 minutes or until tender.
- Drain any excess water.
- In a large frying pan, sauté the onion and garlic until softened.
- Add the grated carrot, cooked lentils, salt, and pepper.
- Mix until uniform. If too dry, or not combining/sticking well, add a little of your egg mix/milk/water .
- Let mixture cool slightly; thaw your pastry sheets whilst you wait.
- Cut each sheet of puff pastry in half.
- Place a line of the lentil mixture down the center of each pastry strip.
- Roll up the pastry around the mixture, sealing the edges with a little egg-wash or milk.
- Cut each roll into smaller pieces, about 4-5cm (2 inches) long.
- Place the rolls on the baking tray and brush with the beaten egg or vegan milk.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
