- 1 ripe banana
- 1 cup rolled oats
- 1/2 cup milk
- 1/4 cup applesauce OR 1 egg depends on your budget/dietary requirements
- 1 tsp baking powder
- 1/2 tsp vanilla extract optional
- Pinch of salt to taste
- Oil or butter for cooking I use olive oil spray

Instructions:
- Combine the banana, oats, milk, applesauce, baking powder, vanilla extract, and salt.
- Mix until well-combined (you can also use a blender for a really smooth batter, if that's accessible to you).
- Heat a non-stick pan over medium heat and add a little oil or butter.
- Pour about 1/4 cup of the batter onto the pan for each pancake (or a tbsp each for pikelets).
- Cook each pancake about 2-3 minutes, until bubbles form on the surface and the edges look set.
- Flip and cook for another 2-3 minutes until golden brown.
- Serve with yoghurt, fruit, or good old margarine & syrup.
