Satay Chicken

Ingredients
- 1 floret broccoli
- 500 g chicken breast
- 1 tbsp soy-sauce
- 1 tbsp lemon juice
- 1 tbsp curry powder
- 1 cup peanut butter
- 1/2 cup coconut milk
- 3 cloves garlic
- 1 tbsp fresh grated ginger root
- shallots to garnish
Instructions
- Chop chicken.
- Marinate meat in soy-sauce, lemon juice, garlic and grated ginger for 3 hours or overnight.
- Cook meat in saucepan with some oil.
- Chop broccoli into pieces and steam.
- Combine meat and broccoli once both cooked and set aside.
- Mix curry powder, coconut milk and peanut butter in saucepan over medium heat to make satay sauce.
- Stir sauce until we’ll combined and pourable.
- Serve chicken/broccoli on rice with sauce.
