Ingredients
  

  • 1 floret broccoli
  • 500 g chicken breast
  • 1 tbsp soy-sauce
  • 1 tbsp lemon juice
  • 1 tbsp curry powder
  • 1 cup peanut butter
  • 1/2 cup coconut milk
  • 3 cloves garlic
  • 1 tbsp fresh grated ginger root
  • shallots to garnish

Instructions
 

  • Chop chicken.
  • Marinate meat in soy-sauce, lemon juice, garlic and grated ginger for 3 hours or overnight.
  • Cook meat in saucepan with some oil.
  • Chop broccoli into pieces and steam.
  • Combine meat and broccoli once both cooked and set aside.
  • Mix curry powder, coconut milk and peanut butter in saucepan over medium heat to make satay sauce.
  • Stir sauce until we’ll combined and pourable.
  • Serve chicken/broccoli on rice with sauce.
