Nutty granola

Ingredients
  

  • 100 g coconut oil
  • 100 g honey or maple syrup
  • 2 tsp ground cinnamon
  • 1 tbsp vanilla extract
  • 1 egg white whisked
  • 100 g rolled oats
  • 400 g mixed nuts pecan, almond, walnut, hazelnuts, macadamias, chopped
  • 80 g flaxseeds ground
  • 1 tsp salt

Instructions
 

  • Preheat oven to 100 degrees.
  • Place oil, honey and cinnamon in a pan.
  • Heat slowly until the honey melts.
  • Remove from the heat then stir in vanilla and when cool add egg white.
  • Then add oats nuts, flaxseeds in a large bowl and add honey mixture stir gentle to combine.
  • Add salt.
  • Place in oven for 1 and a half hours.
  • Turn oven off and keep granola in the oven overnight to get really crispy.
  • Once cool place in an airtight container.
  • Eat with yoghurt and berries.
