Ingredients
  

Ingredients:

  • cups Arborio rice
  • 2 chicken breasts
  • 2 rashers of bacon can be excluded or replaced with 1 cup mushrooms
  • 3 ½ cups chicken stock
  • cups of spinach
  • 2 tbs vegetable oil
  • 1 garlic
  • ¼ onion
  • ½ parmesan cheese

Instructions
 

Method:

  • Prepare chicken stock. Pour 3 ½ cups of stock into a pot and bring to a simmer.
  • Dice chicken into 1cm cubes.
  • Add rice to simmering chicken stock.
  • Cook chicken, bacon, onion and garlic in a pan with 2 teaspoons of oil on med/high heat.
  • Once the rice has absorbed the stock and is soft, add chicken, bacon and spinach.
  • Cook for a further 5 mins, stirring until combined.
  • Serve with parmesan cheese on top.
