Ingredients
- 2 tsp olive oil extra virgin
- 1 onion
- 2 red capsicums, chopped
- 3 garlic cloves
- 1 zucchini, diced
- 2 tsp chilli powder
- 2 tsp cumin
- 2 can chopped tomatoes
- 1 can red kidney beans
- 2 avocados
- 1 tbsp lime juice
Optional
- Coriander, chopped
- Corn chips to serve
Instructions
- Heat oil in a medium pan, add onion, garlic, capsicum and zucchini. Fry for 10 minutes, stirring occasionally. Stir in spices once the vegetables are cooked (softened).2 tsp olive oil, 1 onion, 2 red capsicums, chopped, 3 garlic cloves, 1 zucchini, diced, 2 tsp chilli powder, 2 tsp cumin
- Add tomatoes and beans (adding 1 can of beans liquid). Simmer covered for 15 minutes.2 can chopped tomatoes, 1 can red kidney beans
- Meanwhile, peel and smash avocado in a bowl. Add in coriander (if using) and lime juice, then mix well to result in a guacamole mixture.2 avocados, 1 tbsp lime juice, Coriander, chopped
- Place the soup in bowls, top with guacamole and serve. Add corn chips if using.Corn chips
